In 1996 we opened “Antico Arco”, on the top of Colle del Gianicolo, in front of the Garibaldi museum, a few steps from the botanical garden, but above all close to the most beautiful view of the city of Rome. The dream we have always cultivated is to create a happy place for us who work there and for those who come to visit us. The choice of our products is based on an ethics that pays particular attention to basic, strictly organic foods, such as tomatoes, oil, flours, meats, ensuring the correct supply chain process. All combined with a reduced consumption of plastic. This is us. We will not change the world, not alone, but in the meantime this is our small contribution.

The choice of a young staff is also in the composition of our dining staff room, managed by our Head waiter Fabio Gabrielli who has been with us 13 years. The service is coordinated by Maitre de Salle Gabriele D’Antoni, born in 1996. Guests will be welcomed at the table by our Chef de Rang who, together with the rest of the staff, will take care of our them. To keep the line of all the staff is Mattia Molica, who is convinced that the future of restaurants are young people, able to make the service “smart and cute” (as described by the Gambero Rosso Guide).
